I’ve changed a Unit’s Job from the unit screen, but this is not reflected in the Arena as the defending team.

Job changes are intentionally not reflected in the arena for the defending team. However, you can manually update your defending team's jobs by going to Team Setup > Tap and hold the unit > Tap the Job on the Upper Right-hand corner and select your preferred job.
